【中文摘要】 對小美牛肝菌( Boletusspeciosus) 營養成分進行分析測定, 結果表明, 小美牛肝菌含有豐富的營養:蛋白質32-79% , 脂肪3-55 % , 碳水化合物10-7 % , 粗纖維6-9% , 灰分8-91 % , 每 100g 干重中, 維生素B20-183mg, 鉀789mg, 鈉103mg, 鈣358mg, 鎂125mg, 磷516mg, 鐵為728mg/kg, 鋅238mg/kg。同時測定了蛋白質中的氨基酸組成和脂肪中的脂肪酸組成。
【英文摘要】 The nutritional compositions in the fruit body of Boletus speciosus were detected.The results showed that Boletus speciosus contains abundant nutritions:proteins 32 79%,fats 3 55%,carbonhydrate 10 7%,cellulose 6 9%,ash 8 91%,VitB 2 0 183mg/100g,K 789mg/100g,Na 103mg/100g,Ca 358mg/100g,Mg 125mg/100g,P 516mg/mg,Fe 728mg/kg,Zn 238mg/kg.The amino acid composition in proteins and the faty acids compositions in the fats were also detected.
