【中文摘要】 采用原子吸收分光光度法、比色法等方法對美味牛肝菌、華美牛肝菌、美柄牛肝菌和絨柄牛肝菌4種鮮牛肝菌的粗蛋白、粗脂肪、礦質元素、有害元素的含量進行測定。結果表明,4種鮮牛肝菌中,粗蛋白、粗脂肪、總糖和粗纖維的含量范圍分別是4.38%￣5.42%、2.47%￣3.07%、1.26%￣3.85%、1.23%￣1.56%;礦質元素鐵、鋅、鈣的含量范圍分別是19.62￣37.96mg/kg、6.53￣9.67mg/kg、146.23￣298.02mg/kg;總砷含量未檢出,有害元素總汞、鉛、鎘的含量范圍分別是0.06￣0.73mg/kg、0.4￣0.62mg/kg、0.075￣0.105mg/kg。結論:這4種野生鮮牛肝菌含有豐富的營養成分,但華美牛肝菌、美柄牛肝菌中總汞含量較高,值得關注。
【英文摘要】 Analysis the contents of crude protein,crude fat,mine elements et al.in Boletus speciosus Frost,Boletus Calopus Fr,Boletus edulis Bull Fr.,Boletus tomentipes1 by atomic absorption method,colorimetry.The results showed the contents of crude protein,crude fat,total sugar and crude fiber 4.38%5.42%,2.47%3.07%,1.26%3.85%,1.23%1.56% in the 4 kinds of fresh Boletus sp.respectively.The contents of iron,zinc,calcium were 19.6237.96mg/kg,6.539.67mg/kg,146.23 298.02 mg/kg respectively.The contents of total Arsenic could not be tested.The contents of total mercury,lead,cadmium were 0.060.73mg/kg,0.450.62 mg/kg,0.0750.105 mg/kg,respectively.The conclusion was that the 4 kinds of fresh Boletus sp contained rich nutritious components,but the contents of total mercury in Boletus speciosus Frost,Boletus Calopus Fr were quite high,this should be concerned.
