          AB: The effect of Tremella fuciformis Berkeley polysaccharide on the physical properties and microstructure of curd formed from reconstituted skim milk was investigated. The polysaccharide significantly increased the viscosity, hardness, breaking energy and elastic modulus of the curd, but decreased the coagulation time and syneresis. Study of the curd microstructure indicated that the polysaccharide interacted with casein micelles, causing a higher density, 3-dimensional network in the curd. This network improved water-holding capacity in the curd, and made it thicker to reduce fracture and wheying-off. These effects had a positive relationship with polysaccharide content in the curd.

          AB: Six common edible fungi from 4 orders of Basidiomycetes (Agaricus bisporus (Agaricales), Auricularia auricula and Auricularia polytricha (Auriculariales), Tremella fuciformis (Tremellates), Ganoderma lucidum and Poria cocos [Macrohyporia extensa] (Aphyllophorales)), purchased in Hong Kong, had their total dietary fibre (TDF) content estimated using the Association of Official Analytical Chemists (AOAC) method and their dietary fibre content and composition estimated using the Uppsala method. The nonprotein nitrogen contributed from fungal chitin was corrected in the fibre residue obtained by the AOAC method. The TDF content estimated by the AOAC method was always higher than that estimated by the Uppsala method. TDF content estimated by the AOAC and Uppsala methods ranged from 182 and 132 g/kg DM in A. bisporus to 735 and 711 g/kg DM in P. cocos, respectively. Neutral and amino sugars were the dominant sugars in all the fungi. Sugar composition of the TDF reflected that the major cell wall polysaccharides in most fungi were hemicelluloses, such as beta-glucan and glucuronoxylomannan, pectic substances and chitin. Due to their high fibre content and unique fibre composition, it was concluded that edible fungi have considerable value as sources of dietary fibre in human nutrition.
